IRAGASHI SEIMEN
Igarashi Seimen is a Japanese manufacturer specializing in the production of high-quality ramen noodles and instant ramen soups.
History and Origin
-
Founding: The company was established in 1931 by Taiji Igarashi.
-
Origin: It is headquartered in the city of Kitakata, in the Fukushima Prefecture, which is known for its fertile area surrounded by mountains.
-
Focus: Although the company started with selling rice and soybeans, it began focusing on noodles in 1949, leveraging its knowledge of local ingredients (miso, soy sauce, dashi).
Specialization and Quality
-
Authenticity: Igarashi Seimen is dedicated to preserving traditional Japanese recipes and authentic flavour, especially regional types of ramen (such as Kitakata, Sapporo Miso, Tokyo Shoyu).
-
Production Process: They use water from the Mt. Iide mountain range and selected flour from the surrounding area.
-
Non-Dried, but Aged Noodles: The noodles are not fried, but slowly dried and aged at a low temperature for 48 hours. This process helps preserve the chewy texture and the feel of fresh noodles.
-
Use in Restaurants: Their noodles are also used by many renowned ramen restaurants directly in the city of Kitakata.
Their products, including the Shoyu-flavoured ramen, are valued for their quality and authentic taste, which faithfully replicates classic Japanese ramen.
