Sesame Bread

Sesame bread is a great alternative to regular bread, full of flavor and nutrients. This recipe combines the subtle nutty flavor of sesame oil with the richness of sesame seeds to create a bread that is not only tasty, but also healthy.

Preparation : 20 min

Fermentation : 1.5 hours

Baking : 35 min

Total : 2 hours 25 minutes

Ingredients :

  • 500 g plain flour
  • 30 g sesame seeds (plus extra for sprinkling)
  • 10 g of salt
  • 10 g of sugar
  • 10 g of dried yeast
  • 300 ml of warm water
  • 30 ml of sesame oil

Approach :

  1. Preparing the dough:

    • In a large bowl, mix the flour, sesame seeds, salt and sugar.
    • In a separate bowl, dissolve the yeast in the warm water and let it stand for about 5 minutes until foam forms on the surface.
    • Add the sesame oil to the yeast mixture.
  2. Kneading the dough:

    • Gradually add the yeast and oil mixture to the dry ingredients, mixing well until a dough forms.
    • Turn the dough out onto a lightly floured work surface and knead for approximately 10 minutes until smooth and elastic.
  3. Dough rising:

    • Place the dough in a clean bowl and cover with a tea towel. Leave to rise in a warm place for about 1 hour or until doubled in size.
  4. Molding and second fermentation:

    • Gently turn the leavened dough onto the work surface and shape it into a loaf.
    • Place the loaf on a baking sheet lined with baking paper, sprinkle with sesame seeds and press them down gently.
    • Cover and leave to rise for another 30 minutes.
  5. Baking:

    • Preheat the oven to 200°C.
    • Bake the bread in the preheated oven for approximately 30-35 minutes, or until the crust is golden brown and the bread makes a hollow sound when tapped gently.
  6. Cooling:

    • Remove the finished bread from the oven and let it cool on a wire rack.

Alternatives :

  • Flour: For a gluten-free version, you can use a gluten-free flour blend.
  • Seeds: Try adding different seeds like flax, sunflower or chia for an even richer flavor and texture.
  • Flavors: Add dried herbs like thyme or rosemary for extra flavor.
