Hakkaisan
Hakkaisan – premium Japanese sake from Niigata
Origin and water quality
Hakkaisan is a renowned sake producer located at the foot of the sacred Mount Hakkaisan in Niigata Prefecture, a region famous for its heavy snowfall and crystal-clear spring water. This water, filtered through mountain soil and originating from melted snow, gives the sake a delicate, pure, and well-balanced taste.
Philosophy and style
Hakkaisan follows the philosophy of making sake that pairs perfectly with food. The typical style is “tanrei karakuchi” – clean, dry flavour with a fine texture and refreshing finish.
Traditional production
- Hand-crafted rice koji
- Small-batch brewing

- Certain types, such as Snow Aged Junmai Daiginjo, are matured in the traditional snow cellar Yukimuro, where the temperature is kept stable by large amounts of snow
